These delicious brownies are a family favourite and very easy to make. My children love to help make these at the weekend. They go great with a nice cup of tea or coffee!
Makes 12
115g milk chocolate
115g unsalted butter
3 medium eggs
200g caster sugar
1/2 teaspoon vanilla extract
pinch of salt
140g plain flour
100g milk chocolate chunks
Preheat oven to 180 degrees. Line a 9 1/2 in x 9 1/2 in tin with greaseproof paper.
Melt the chocolate and butter in a heatproof bowl set over a pan of gently simmering water.
Beat together the eggs, sugar, vanilla and salt using a hand/stand mixer. Stir in the melted chocolate mixture. Sift over the flour and fold in. Add the chocolate chunks.
Pour the mixture into the prepared tin and spread evenly. Bake for 20 minutes, check mixture has set with a knife or I like to use a cocktail stick. It should come out clean, if not bake a few minutes longer. Leave to cool in the tin. Lift out using the edges of the greaseproof paper and cut into 12 pieces for serving.
