Shortbread biscuits

This is a simple recipe which makes some very yummy biscuits indeed! You can use any shaped cookie cutter you fancy. I thought they would look nice heart-shaped.

Makes 8 (large heart-shaped cookie cutter)

190g plain flour

125g unsalted butter

55g caster sugar

Heat the oven to 180 degrees.

Cream together the butter and sugar. Sieve in the flour and mix well. Form a dough using your hands to press it all together.

On a floured surface, roll out to approx 1cm thick. Make your cutting and place on a grease proof lined baking tray. Keep rolling and cutting your dough until all the dough is used.

Pop in the oven for 15 minutes, try not to let them get too golden in colour.

Once baked, sprinkle each biscuit with a little caster sugar and leave to cool on the tray.
